Special Sapin Sapin Ever Ingredients: 4 cups glutenous rice 3 cans or (4 1/2 cups) coconut milk 2 cans coconut milk for Latik 1 1/2 cup white sugar 1 can condensed milk 1/2 cup ube halaya 1/2 cup macapuno 1/2 cup jackfruit strips 1 tsp ube flavoring 1 tsp yellow food color 1/2 cup dessicated coconut Instructions: 1. In a large mixing bowl mix glutenous rice, 3 coconut milk, sugar, condensed milk until smooth. 2. Divide the mixture equally into 3 and add flavors to each bowls 3. 1st bowl: Add jackfruit strips then yellow food coloring mix well until blended. 4. 2nd bowl: Add ube halaya and the ube flavoring mix well untill blended. 5. 3rd bowl: Add macapuno mix well until blended. 6. Place the first mixture ( jackfruit mixture)in a greased pan lined with cling wrap then cober with plastic and foil place in a steamer and steam for 15-20 minutes or until the mixture sets. Remove from steamer. 7. Place the 2nd mixture ( ube halaya mixture)on tip of the jackfruit sapin sapin then place in a steamer and steam for 15-20 minutes or until the mixture sets. Remove from steamer. 8. Place the 3rd mixture ( Macapuno mixture)on top of the ube sapin sapin then place in a steamer and steam for 15-20 minutes or until the mixture sets. Remove from steamer. 9. Toast dessicated coconut. Set it aside. 10. In a pan over medium heat, add 2 cans of coconut cream and bring to a boil. Cook, stirring occasionally until liquid starts to thicken. 11. Lower heat and continue to cook. As oil starts to separate and solids begin to form, regularly stir and scrape sides and bottom of the pan to prevent from burning. Continue to cook and stir until curds turn golden brown. Place in separate containers until ready to use. 12. Transfer Sapin Sapin onto a serving plate pour latik on top of sapin sapin and sprinkle toasted coconut. 13. Serve and enjoy!
