Ingredients: · 3 Chicken breasts made into cutlets · 2 eggs · 5-7 tomatoes · 1.5 cups of Gluten-free bread crumbs · Pasta dough or boxed pasta · Classico tomato basil marinara · Fresh basil to taste · Italian seasoning mix and salt to taste · 3 tablespoons of corn starch · Fresh mozzarella cheese · ¼ cup of parmigiana cheese 1. I made the pasta first and made the dough into spaghetti noodles using a size 5 setting on my pasta maker, and I placed these noodles aside while I work on the chicken. Do not cook your noodles yet, I made the actual noodles in the beginning and placed aside until needed. If you are making boxed pasta, make this towards the end while your chicken is in the oven baking. 2. Clean and season your chicken well with Italian seasoning and salt. After it is seasoned, lightly coat in cornstarch, this helps with keeping the bread crumbs on. In a bowl mix your eggs well, in a separate bowl place your bread crumbs. Dip your chicken cutlets into the egg mix, and then coat with bread crumbs. Place aside until you are ready to fry them. 3. Fry your chicken at medium heat until the internal temperature reaches roughly 160-165° 4. Slice 4 tomatoes lengthwise and dice the remaining tomatoes. With the remaining tomatoes that are diced, lightly coat in oil olive, salt, and Italian seasoning. Also, chop some fresh basil and place it aside. 5. After your chicken is finished frying, layer your chicken on an oven pan. Each chicken should have marinara on top, as well as a layer of fresh mozzarella, and the sliced tomatoes. 6. Bake in the oven at 350 for 10-15 minutes. You can eye this to desired cooking time. 7. Boil your pasta in hot water on the stovetop and use the remaining marinara to coat your pasta once the pasta is finished cooking. 8. You are ready to plate your dish with your spaghetti, top the spaghetti with your diced tomatoes, sprinkle your parmigiana cheese and fresh basil. Place beside your chicken parmesan cutlet, garnish with fresh basil and enjoy!
