There're many tasty types of Borek, a Turkish pastry dish, that we decided to also make this spiral-shaped beauty, filled with spinach and soft brine cheese. Moreover, we reached out to our Greek friends and used their ultra thin Filo / Phyllo dough sheets, in order to get a super crisp Kol Borek (Turkish, which translates to "arm borek/pastry").

INGREDIEDNTS
- Filo / Phyllo dough sheets [10 oz / 300 g]
- spinach [1 lb / 450 g]
- Turkish "white cheese" or Greek Feta [7 oz / 200 g]
- vegetable oil [1/3 cup / 80 g]
- clarified butter [3 oz / 90 g]
- 1 medium-sized onion
- Aleppo chili flakes [1 tsp]
- salt & pepper to taste
- sesame & nigella seeds
