Garam which means warmth is made up of a combination of lightly toasted spices like cumin, coriander, and cinnamon sticks that are then grinded together. The beauty of garam masala is that there are so many ways to make it. Each region of India may have its own unique blend and recipe that can make a dish unique. INGREDIENTS: - 1 cup of coriander seeds - 1/2 cup of cumin seeds - 1 inch of cinnamon sticks - A few cloves - A few peppercorns - A few cardamom pods - Yes there is no “actual number” here, however, I feel like getting as a home cook, getting in the habit of “going with the flow” is important when creating your own recipes RECIPE: - Lightly toast your spices for 3-5 minutes on a low heat till fragrant. It’s very important not to burn your spices or you’ll have a burnt taste in the masala. - Once the spices are toasted, let them cool for 10 minutes and add to a spice grinder - Grind thoroughly till the spices combine. An indicator here is if the cinnamon sticks break apart and become a powder - Once you have the masala, add it to a sieve with a bowl underneath and sieve the spice mixture to a fine powder (repeat as many times as you prefer to remove coarse pieces) - Add to an airtight container and enjoy for the next 4-6 months
