HOW TO MAKE 👇
Ingredients
For the marination
Mutton - 500 gm
Onion - 1
Ginger garlic green chilles paste - 2 tbsp
Curd - 1/2 cup
Salt - 1 tbsp
Turmeric - 1/4 tbsp
Red chilli powder - 2 tbsp
Coriander powder - 1 tbsp
Ghee - 2 tbsp
For the korma powder
Black cardamom - 4
Green cardamom - 4
Black pepper - 20
Cinnamon stick - 1 inch
Cloves - 6
Mace - 1
Rose petals - 1 tbsp
Bay leaf - 2
For the gravy
Fried onion paste
Kewra water - 1 tsp
Saffron infused water - 1 tbsp
Process
1. In a pot, add mutton and mix all ingredients mentioned in the marination section and marinate for 1 hour
2. In a pan dry roast all the whole spices and make a fina powder masala
3. In a kadhai fry the onions and make a birista. Make a paste of it
4. Place the pot over high heat, cook for 10 mins and lower the heat, Cover and cook for 25 mins till all the ghee gets separated
5. Add the brown onion paste and 2 tbsp of the masala prepared. Cook fot 10-12 mins
6. Add 300 ml water and let it cook on low heat for 45 mins
7. Add kewra water and saffron infused water and let it sim for 5 mins!
